Jazzed up chicken and rice

Want a delightful dinner that’s quick and easy to make? This jazzed up chicken and rice recipe should do the trick.



  • 1/2 cup finely chopped medium green onions (with tops)
  • 1/2 cup chicken broth
  • 1 cup grated Parmesan cheese
  • 1 cup uncooked long-grain white rice
  • 1 punnet sliced fresh mushrooms
  • 1 cup tomato pasta sauce
  • 2 tbsp olive oil
  • 2 tbsp red or yellow bell peppers (cut into strips)
  • 2 cups shredded chicken
  • 2 1/4 cups water
  • 3 finely chopped cloves of garlic
  • 3 tbsp fresh chopped parsley



  • Cook rice according to the packaging instructions.
  • Heat the oil over medium-high heat in a deep skillet then cook the mushrooms, bell peppers, onions and garlic. Stir frequently and remove from heat when the vegetables are tender.
  • Stir the rice, pasta sauce, chicken broth and half of the cheese into the skillet. Cook over medium-low heat until the mixture is hot.
  • Garnish with the remaining cheese and parsley.
